    Sticky Toffee Pudding (Pressure Cooker)

    The ultimate English dessert. Perfect Sticky Toffee Pudding in individual servings. Moist, rich and dense.

    Think of a sticky toffee cake, served warm and covered in a caramel sauce. Sweet eats!

    This steamed date pudding recipe is made in the pressure cooker. Individual servings of super moist date cake smothered in a sweet toffee sauce. Perfect English sticky toffee pudding.

    There is a handful of desserts that are on my favourite list, and this is at the top. From the very first time I tasted this heavenly creation, I was hooked. I think even Gordon Ramsay would be thrilled with this sticky toffee pudding recipe.

    Are you a caramel sauce and toffee lover? If you are like my husband, the sweeter the better.

    One of my daughter’s favourite cakes for her birthday is Speckled Toffee Cake.

    Apple Muffins with Toffee Topping is the perfect Fall recipe. In fact, they make a great Halloween treat. Much healthier than candy apples.

    Sticky Date Pudding Requires:

    • chopped dates
    • water
    • blackstrap molasses
    • all-purpose flour
    • baking powder
    • butter
    • egg
    • vanilla extract
    • brown sugar
    • whipping cream

    Traditionally it is made in the oven, but I am happy to say you can make this easily in the pressure cooker. This method is quick, simple and the pudding comes out perfectly cooked.

    Instead of making a huge pan, I made them in (affiliate) individual ramekins.

    Pressure cookers have come a long way since I was a kid. I will admit I was uncertain about using one, but seeing the results I am thrilled.

    I used a (affiliate) stove top pressure cooker for this recipe. I had this way before Instant Pots became the “new” way to pressure cook. If you are an avid Instant Pot user, I know you will be able to adapt this to work in your appliance.

    Cooking up wonderful and flavourful dishes is quick and easy. Pressure Cooker Baked Beans is a perfect example. So much faster than the traditional oven-baked method.

    Guinness Irish Stew is another awesome pressure cooker recipe. Made in under 40 minutes. That is fast for a delicious stew recipe that is so flavourful, it tastes like you cooked it all day.

    Classic British Dessert Recipes

    There are a few different desserts. Sometimes people are confused as to what they actually are.

    Sticky Toffee Pudding is a moist tender cake made with dates. Traditionally baked in the oven. Served warm and smothered in a silky sweet caramel sauce. Some people say toffee sauce as well.

    Spotted Dick is a traditional British pudding made with suet and dried fruit. It resembles a steamed cake, and is served with custard.

    Christmas Pudding is a traditional holiday dessert. Steamed for hours (even made year in advance). Rich and moist made with raisins and other dried fruit. Flavoured with brandy or stout beer. Served with a hard sauce which is a spreadable topping made with rum or brandy.

    Making Sticky Toffee Pudding

    This dessert is not difficult to put together. It’s really like baking a cake.

    • Combine the dates, boiling water and molasses and set aside.
    • Cream the sugar, butter, eggs and vanilla.
    • Mix ingredients together and place in prepared ramekins.
    • Cook.

    While your date puddings are steaming away, prepare the caramel sauce. This simple sauce is made of brown sugar, whipping cream, butter, and vanilla. Oh my it is so good. 

    Serve the steamed pudding warm. Poke a hole in the middle and pour in the silk sweet sauce. This is the BEST sticky toffee recipe ever.

    Can sticky pudding be reheated?

    Yes, in fact I made this recipe and reheated it before serving. You have 2 choices. I placed mine in the microwave for about a minute. Alternatively you can heat them in the oven for about 20 minutes at 325ºF.

    How long will they last?

    These steamed puddings will last 3-4 days in an airtight container, or wrapped in plastic.

    Can you freeze sticky date pudding?

    Yes you can. It will freeze well for up to 4 months. Wrap individual servings in plastic wrap, and then cover in foil to prevent freezer burn. You can also freeze the sauce. Thaw and reheat before serving.

    The fact that I had leftovers to freeze was great.  Those will be coming out very shortly since after writing this post my craving for this pudding has grown.

    Ingredients

    For the Pudding:

    • 1 ¼ cups finely chopped dates
    • ¾ cup boiling water
    • ¼ cup blackstrap molasses
    • 1 ¼ cups all-purpose flour
    • 1 teaspoons baking powder
    • ¼ teaspoons salt
    • ¾ cup brown sugar
    • ⅓ cup unsalted butter (room temperature)
    • 1 egg
    • 1 teaspoons vanilla extract

    For the Caramel Sauce:

    • ⅔ cup dark brown sugar (packed)
    • ⅓ cup whipping cream
    • ¼ cup unsalted butter
    • 1 teaspoons vanilla extract
    US Customary – Metric

    Instructions

    • Butter 8 ramekins and set aside.
    • In a bowl combine the dates, boiling water and molasses. Mix and let cool.
    • In another bowl combine the flour, baking powder and salt.
    • In a large bowl using a mixer, cream the brown sugar and butter till fluffy. Beat in the egg and vanilla.
    • To this bowl, alternately add the date mixture and flour mixture, beating well after each addition.
    • Divide batter evenly into the 8 buttered ramekins.
    • Cover each ramekin with a piece of buttered foil, making sure to seal well.
    • Stack the ramekins in the rack.
    • Place the rack into the pressure cooker.
    • Pour in 2 cups of water around the rack.
    • Lock the lid in place, and place over high heat to bring up to pressure.
    • Reduce heat to med-low (to keep an even pressure).
    • Continue to cook for 20 minutes.
    • While the puddings are cooking make the Caramel Sauce.
    • When the pudding is done, release pressure, and carefully remove ramekins from pressure cooker.
    • Remove foil from ramekins.
    • Serve puddings warm, along with the Caramel Sauce.

    To make the Caramel Sauce:

    • Combine the brown sugar, cream butter and vanilla in a small saucepan.
    • Bring to a boil over medium high heat, stirring to ensure sugar is dissolved.
    • Reduce heat and simmer for 5 minutes. Sauce should be smooth and slightly thickened.
    • Remove from heat and keep warm.
    • Pour over warm pudding.
    • ENJOY!!

      Somehow I’ve never eaten sticky pudding.. But it sounds decadent and amazing! And I love making desserts in ramekins instead of a big pan- portion control!! Lol
