    Sweet Potato Au Gratin is the ultimate comfort food casserole recipe.

    Thinly sliced sweet potatoes, smothered in a cream sauce, topped with cheese. Hearty and delicious. You will also want to give these stuffed sweet potatoes a try too.

    This au gratin potato recipe was originally posted in the 41st edition of the Milk Calendar and I shared it in December 2017 as a sponsored post.

    I was thrilled when I was asked to recreate the January 2018 recipe Hearty Sweet Potato Au Gratin because I am a potato lover.

    I was so excited when I was asked to take part in the #MilkCalendar campaign that year. My fridge is ALWAYS stocked with several varieties of cheese. I use it in delicious recipes for any meal of the day. When I want a snack, crackers and cheese are my “go-to” options most days of the week.

    These scalloped sweet potatoes are simple and oh so delicious. Cheese is the most important factor in au gratin potatoes.

    You Will Need:

    • sweet potatoes
    • butter
    • garlic
    • flour
    • cream
    • sharp cheddar cheese
    • fresh thyme
    Best cheese for potatoes au gratin?

    You will want to select sharp, bold cheeses. Old cheddar, gruyere, Swiss or feta would be awesome choices.

    What is the difference between scalloped potatoes and au gratin?

    Most people will say there is NO difference. Both use thinly sliced potatoes cooked in a casserole dish. Scalloped potatoes ALWAYS have a cream sauce. Au gratin is ALWAYS is cooked with cheese. This recipe contains both. Scalloped potatoes usually have a breadcrumb topping. Gratin Dauphinois does not.

    Preparing This Sweet Potato Au Gratin Bake

    These cheesy au gratin potatoes are not difficult. You have a couple of parts to this recipe. The cream sauce, and the layering of the casserole. See the recipe card for the exact instructions, but here is the quick low down.

    Step ONE:

    • Peel and slice your sweet potatoes (about ⅛ inch).
    • Grate your cheese.
    • Preheat the oven, and prepare a casserole dish.

    Step TWO:

    • Make the cream sauce in a medium saucepan.
    • This will take about 4-5 minutes.

    Step THREE:

    • Layer the casserole.
    • Start with the potatoes.
    • Add some cream sauce, and thyme.
    • Repeat the layers.
    • Cover and bake.
    • Remove from oven and take off the foil.
    • Add the grated cheese and bake uncovered until bubbly.

    Ingredients

    • 1 ½ pounds sweet potatoes
    • 2 tablespoons butter
    • 1 clove garlic (minced)
    • ½ teaspoons salt
    • 2 tablespoons all-purpose flour
    • 2 cups 18% cream
    • 2 tablespoons fresh thyme (chopped)
    • ½ cup Canadian cheddar (shredded)
    US Customary – Metric

    Instructions

    • Preheat oven to 375º F, and grease a 8×8 inch baking pan. Set aside.
    • Peel potatoes and carefully slice into ⅛ inch thick rounds. Set aside.
    • Grate/shred cheese. Set aside.

    To make the Cream Sauce:

    • In a medium saucepan melt butter over medium heat.
    • Add garlic and salt. Stir 1 minute.
    • Whisk in flour until combined.
    • Gradually add cream, whisking until combined and smooth.
    • Bring to a boil, and heat until thickened (2-3 minutes), whisking occasionally. Remove from heat when done.

    To layer the Sweet Potato Au Gratin:

    • Layer ½ the potatoes into the prepared baking dish.
    • Scatter ½ the chopped thyme on top.
    • Top with ½ the cream sauce.
    • Repeat with the potatoes, sauce and thyme.
    • Press down slightly to even out layers and get all potatoes covered in cream. 
    • Cover with foil, and bake for 30 minutes.
    • Take dish out of the oven, and remove foil.
    • Sprinkle grated cheese (and additional thyme if you like), and bake uncovered for 15 minutes until top is bubbly and deep golden brown.
    • Remove from oven and let stand for 10 minutes.
    • ENJOY!

    Notes

    Have fun with this delicious recipe. You can use a combination of sweet potatoes and Yukon Gold. Also…try a different flavour of cheese.
    **NOTE** To make cutting the potatoes easier, you can use a mandolin OR thinly cut a slice off the potato lengthwise, so that it will lay flat. Slice crosswise.

      I can’t even remember the last time I had au gratin potatoes, and I don’t know why because it’s such a delciious, comforting dish! I love that you use sweet potatoes instead of regular in this one. Looks really good

      A calendar with recipes sounds amazing! I would love to get one. I absolutely love sweet potatoes and this recipe is pure perfection! We always have tons of cheese at home so this is a must for us! Gratins are always so elegant but still comforting and pleasing! Yum!

      I’ve never made au gratin with sweet potatoes before… this is a bit foreign but would certainly increase the nutrient profile from standard Russett potatoes. I’m game! I will add a bit of spice though, perhaps a dash or cheyenne or chipotle. 🙂

      Seriously? Your family doesn’t like scalloped potatoes? This is so strange! Although, come to think of it, my husband is also not the biggest fan. I love that this dish is made with Sweet Potatoes. I am definitely going to try it. Such a wonderful and delicious recipes. And the pictures are beautiful, Gloria!
