This was the second time I participated in this type of interactive class. The first time was all about burgers. We had a blast, and since then have made those burgers several times at home. Such a hit with guests.
This time, grilling seafood was the name of the game. Shrimps, scallops, salmon and octopus were just a few things we would be cooking and eating.
Now, if you have a hubby that loves to BBQ (like mine), believe me you will have NO problem getting him to come along for the ride. This is the perfect date night. He will have so much fun playing with all the fun grills, you might have a hard time getting him out of the store.
Grilling Seafood Techniques
No seafood class should be without oysters. OMG we had the biggest, freshest oysters I have ever seen. Chef Rene took it upon himself to kindly shuck these for us. Fresh PEI oysters that tasted just like the sea.
You just might learn a new technique (or two) about grilling seafood. For instance, have you ever used a salt stone on the grill? This was the first time we had experienced this. I had seen them in the stores, but was not sure on how to use them.
We were totally surprised how well the shrimps and scallops cooked. The stone transferred a mild salt taste to the seafood. Apparently even some restaurants allow you to cook your own steak on them. How fun would that be?
We are salmon lovers, and cook it all the time. We have done it on cedar planks, but in this class it was done with “indirect” heat. With a few simple ingredients, we had the most flavourful, moist and totally delicious salmon EVER!
Seafood Chowder and More
Grilled octopus was something I had never tasted before. I thought it would be really tough and chewy. When you learn the correct way to grill it, you just might be surprised with the results. I sure was. The miso glaze was the perfect sauce for this grilled delight. Oh, did I mention you get a copy of all the recipes?
Have you ever made seafood chowder on the grill? WOW, you really want to give this a try. Mussels, clams, shrimp, scallops, white fish in a wonderful broth. All cooked in a wok on the grill. How cool is that? Let me tell you, that was my favourite part of the meal.

You’ve really gotten my attention with this post! My husband and I love to grill, especially with seafood, but I see a few techniques we haven’t tried in your post. I want to go to Barbecue U! It sounds like such a fun experience and having the recipes to prepare at home later would keep those new techniques fresh in my mind. This would make an excellent “Father’s Day” gift — that’s good for Mom too!

OMG these are SOOOO much fun. We have done a few now. We did a Valentine’s one instead of going to a restaurant…so good.
