Sometimes childhood memories are so strong…and this recipe for BEST Banana Cake EVER is one of those food memories that keeps us coming back for more.
Way back when I was in Grade 7, I had a friend and her mom made this incredible banana cake. It was THE BEST I had ever eaten. I asked her for the recipe, and she very willingly gave it to me. To this day it is the ONLY banana cake I bake. Every time I make it my family says … “oh yeah I remember that cake“!!
Ripe bananas always seem to find a way in most households. It’s always great when you turn them into something delicious….and delicious this is. Simple ingredients make a wonderful cake. It doesn’t get any better or easier than this.
For some reason (perhaps nostalgia) I still to this day use a glass baking dish for this cake. Guess that is how I wish to remember it. I also remember eating it right out of the baking dish itself.
A really moist cake with loads of banana flavour….and topped with a very thick glaze….perfect for dessert, coffee break….or just because you want some. I know whenever I make it my kids say…“save some for me”.
Drizzle with melted dark chocolate …. and …. ENJOY!!

- For the cake:
- 2 cups all purpose flour
- ½ cup white sugar
- ½ cup brown sugar
- ½ cup butter
- ½ cup milk
- 1 egg
- 3 ripe bananas
- Pinch of salt
- 1 tsp. of vanilla
- 2 tsp. of baking powder
- 1 tsp. baking soda
- For the glaze:
- 1 banana
- 2 tbsp. butter
- 2½ cups sifted icing sugar
- Milk (if needed)
- Preheat Oven to 325°F
- Grease 9 x 13 baking dish.
- Cream butter and sugars.
- Add egg, vanilla and milk.
- Add flour and baking powder.
- Mash bananas and add baking soda to banana mixture.
- Add banana mixture to batter.
- Scrape batter into greased baking dish.
- Bake for approximately 25 - 30 minutes.
- Cool and glaze.
- Puree banana.
- Blend banana and butter.
- Add sifted icing sugar.
- If glaze is too thick, add milk…1 tsp. at a time until you find a consistency you like.
- Glaze cake.
- Cut into pieces, drizzle with melted dark chocolate and ENJOY!!
