Ingredients

butter

whole wheat sandwich bread
1
teaspoons
vegetable oil
1
ounce
smoked salmon slices
(divided)
1
ounce
goat cheese
(crumbled & divided)
2
teaspoons
capers
(chopped)
4
eggs
salt & pepper
(to taste)
Instructions
Preheat the oven to 425º F
To Prepare the Bread:
Lightly butter each slice of bread. Cut out the center of the bread slices, leaving about ½ inch of crusts to create a hole.
Place the bread slices and cut-outs, buttered side up, on a non-stick baking sheet.
Drizzle the oil in each hole.
For the First Style:
Chop half of the smoked salmon into small pieces, and add to a small bowl.
Add half of the crumbled goat cheese, half the capers, and 2 eggs to the bowl. Mix well with a fork.
Pour the mixture into the holes of 2 bread slices.
For the Second Style:
Cut the smoked salmon in half, and layer at the bottom of each remaining (2) bread slice holes. The smoked salmon should cover most of the hole.
Top with the remaining crumbled goat cheese and chopped capers.
Carefully crack the egg on top of the goat cheese, making sure the yolk remains whole.
To Bake:
Bake in the oven: 12 minutes for medium eggs, 9-10 minutes for runnier eggs.
