Prep the dates by slicing into them lengthwise and removing the pits. Set aside.
12 Medjool dates
Using a small spoon, stuff each date with cheese and place on a platter.
3 ounces Boursin cheese
Top each stuffed date with a cranberry.
1 tablespoon dried cranberries
Warm the honey and drizzle over the dates. These are ready to serve.

Notes
Boursin cheese can be plain or flavoured. I used cranberry & pepper. Apple maple would also be delicious. Alternatively you can use plain cream cheese, ricotta cheese, goat cheese, feta or mascarpone.These dates can be made ahead of time (minus the honey drizzle) and placed in a sealed container in fridge. Remove about 30 minutes before serving. Drizzle with honey at the last minute.You can also heat them slightly in the microwave, or in a moderate oven for about 5 minutes. Drizzle the honey after heating. Chocolate honey can be replaced with regular honey, hot honey or any other flavoured honey you like.Cranberries, blueberries, cherries, figs or nuts are all great toppings.
