2poundsApples(peeledcored & cut into chunks) (Your choice of variety)
1poundParsnip(peeled & roughly diced)
2tablespoonsbutter
½teaspoonsground ginger
1teaspoonscinnamon
1 ½cupsfresh apple cider
2cupsonion broth
1teaspoonsfresh lemon juice
¼teaspoonsgarlic powder
1tablespoonsbacon flavoured olive oil(more for garnish)
¼teaspoonssmoked sea salt
Pepper to taste
½cupsliced dried apples(for garnish)
Instructions
Prepare apples and parsnips and set aside in a bowl.
Heat butter in a heavy bottom pot over medium heat.
Add apples, parsnip, ginger, cinnamon, salt & pepper.
Sauté for 10 minutes.
Add lemon juice.
Add apple cider and onion broth..
Bring to a boil, reduce and cook for 10 minutes (apples & parsnips should be fork tender).
Remove from heat.
Using an immersion blender, pureé until smooth.
Add bacon oil.
Ladle into bowls.
Garnish with dried apple slices, and additional bacon flavoured oil.
