Preheat oven to 400º F and line muffin tin with liners (or use silicone muffin cups).
Peel apples, core and dice. Set aside.
In a bowl beat the egg, add milk, melted butter, maple syrup and graham crumbs. Mix to combine.
In another bowl whisk the flour, baking powder, salt and cinnamon.
Add the wet mixture to the dry mixture, and stir to moisten.
Fold in the apples.
Scoop batter into muffin cups.
Top with Skor bits.
Bake for approximately 18-20 minutes.
Remove from oven. Let cool slightly in pan. Transfer to cooling rack.
You can use any apple variety you like. In this recipe I diced the apples because I like chunks of fruit, but feel free to grate the apple if you prefer.
