Infused simple syrup made with spearmint leaves is so easy to make. Use it in drinks, on ice cream, desserts and more.

Ingredients

fresh spearmint
(approximately 1 cup chopped)

cup
white sugar

water
Instructions
Wash and roughly chop the spearmint. I used the stalk as well, you can opt to only use the leaves, but you may need to increase the amount.
1 ounce fresh spearmint
Bring the sugar and water to a boil, reduce heat , and cook for 4-5 minutes until it reduces slightly. Remove from heat.
1 cup white sugar,
1 cup water
Add the chopped mint into the hot syrup water, mix to submerge, cover and allow to infuse for 30-60 minutes.
Place a wire mesh strainer over a bowl or measuring cup. Pour the infused syrup into the strainer to drain.
Place the mint infused syrup in a glass jar. Store in the fridge for up to 1 month. For longer storage place in the freezer.

I estimated ½ ounce per serving, but you can certainly use more or less.
