Delicious cold zucchini noodle salad with a creamy goat cheese dressing.

Ingredients
For the Salad:

zucchini
(washed & spiralized)
8
ounces
cherry tomatoes
4
ounces
black olives
(sun dried)
3
ounces
goat cheese
(crumbled)
2
tablespoons
fresh parsley
(finely chopped)
For the Dressing:
⅓
cup
olive oil
2 ½
teaspoons
lemon juice
½
teaspoon
sugar
⅛
teaspoon
black pepper
1
teaspoon
greek seasoning
Instructions
In a cup/bowl whisk together the dressing ingredients and set aside.
⅓ cup olive oil,
2 ½ teaspoons lemon juice,
½ teaspoon sugar,
⅛ teaspoon black pepper,
1 teaspoon greek seasoning
Wash and spiralize the zucchini, and place in a bowl.
1 pound zucchini
Add all the other ingredients (except parsley).
8 ounces cherry tomatoes,
4 ounces black olives,
3 ounces goat cheese
Add the salad dressing and toss.
Garnish with the chopped parsley.
