One of my absolute favourite spices is Smoked Paprika. In my early cooking days, the only paprika I knew about was regular Hungarian Sweet Paprika. This was the only one that my mom used….so I thought it was the only one there was. Boy was I wrong! While it has it’s place in devilled eggs, potato salad and goulash….there is so much more to paprika that sends the taste buds on a wonderful tasty adventure.
Smoked Paprika actually comes from La Vera Spain. It has a smoky bold taste due to the drying of the peppers over wood fires. It sort of reminds you of cumin but a little sweeter. You can get various varieties of smoked paprika including sweet (dulce), hot (picante) and bittersweet (agridulce).
One day while shopping in St. Lawrence Market years ago, I came across this wonderful spice. I was very excited and picked up both sweet and hot to try in my kitchen. After experimenting in various recipes I instantly fell in love with the unique taste. Although all the varieties have that “smoky” taste, there is a huge difference in the heat levels. The hot variety certainly kicks up the heat in your favourite dishes like chili, paella, roasted veggies and bbq sauces.
I love using high quality spices. The grocery store variety is ok in a pinch, but for much higher quality, there are lots of other options.
