What a great time to discover this recipe. We were at the store and they are full of different kinds of apples. This soup sounds wonderful — it certainly is the first time I’ve ever run across anything like it. And I just told Hubby that I HAVE to restock on my bacon flavored olive oil — it is soooo good. Can’t wait to try out this soup.

This is such a cool idea! I love applesauce warm, so it totally makes sense to turn it into a soup! I’ll have to remember this for next fall!

This recipe is definitely an innovation!! Very interesting how you combine the sweetness of the apples with the bacon.
We would definitely give it a try. One question though; Is there a replacement for Parsnip? Since we don’t have this root here in Greece. How about carrots? Will it change the taste?
