I will admit when it comes to baking I never ever think of using the microwave. As I looked though Michael Smith’s new cookbook Make Ahead Meals: Over 100 Easy Time-Saving Recipes his recipe for Amazing Morning Microwave Muffins caught my attention. Really who wouldn’t want a nice fresh hot morning treat with their cup of coffee or tea? The fact that it is ready in 1 minute and you can even take the ingredients to go and make it at work….AWESOME!!
As I read the recipe I thought I would adapt it to fit into the gluten free diet. Lots of people have to eat gluten free for health reasons, and a large number of people choose to eat gluten free as personal preference. I do have a few friends that are in that category so I am always striving to make sure I have a few good recipes that work when I am cooking or baking for them.
Making a muffin in the microwave…in 1 minute sounded too easy to be true, so I set off into my test kitchen to see what happens. I was amazed…it totally WORKS!! A fresh made muffin soufflé and coffee was an awesome way to start my weekend. The fact that you can actually take this “on the go” and pop it in at work…you will have your coworkers wanting the recipe when they see this.
When using this recipe I substituted a gluten free flour blend for the all purpose flour and increased the amount of baking powder. My flour blend included a mixture of brown, white and sweet rice flours and tapioca flour.

Gluten Free Muffin Soufflé
- 1 cup gluten free flour blend
- 2 tbsp sugar
- 2 1/2 tbsp baking powder
Fore each Soufflé
- 1/2 cup chocolate chips
- 1 egg
- 1 tsp butter
Combine dry ingredients into a bowl.
For each soufflé: Into a ramekin add 1/4 cup dry mix.
Add 1/4 cup chocolate chips.
Add 1 egg.
Add 1 tsp. of soft butter.
Stir and cook in the microwave for 1 minute.
